Broccoli Salad

If you are trying to be considerate of the health needs of others at group food gatherings, Broccoli Salad is an easy, make ahead, healthy choice.

Course Salad

Ingredients
  

  • 1 bunch broccoli
  • 3 slices bacon
  • 3/4 cup shredded Cheddar or Mozarella cheese
  • 1/2 cup almonds or sunflower seeds
  • 1/2 cup raisins
  • 1/2 cup Miracle Whip or other whipped dressing
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup sugar or Splenda
  • 1/4 cup grated Parmesan cheese

Instructions
 

  • Chop broccoli into small pieces. Fry bacon till crisp, crumble, and set aside.
  • In a large bowl, mix broccoli, bacon, sunflower seeds,raisins & Cheddar cheese. In a small bowl, combine salad dressing, sour cream or yogurt, sugar, and Parmesan cheese. Drizzle dressing over top; toss lightly.

Notes

Broccoli crowns vary in size. Adjust the amount of dressing according to how much broccoli you have.
