Gluten Free Apple Crisp

What dessert can you make for your gluten intolerant friend? By using cornstarch and oatmeal in place of flour, you can turn this tasty dessert into a safe and healthy dessert.

  • 9x13" baking pan

Ingredients
  

  • 6 apples, pared and sliced thin
  • vegetable oil cooking spray
  • 1/3 cup oatmeal
  • 1 cup Stevia You can use all sugar, or a mixture of Stevia and sugar. Adjust sugar to taste depending on the tartness of the apple used.
  • 1 Tbs[ cornstarch
  • 1 tsp cinnamon
  • 2-3 cups regular oats
  • 1/2 cup butter
  • 1 Tbsp brown sugar
  • 3 Tbsp Stevia
  • 1/2 cup chopped walnuts or pecans

Instructions
 

  • Spray a 9x13" baking pan with vegetable oil cooking spray. Sprinkle 1/3 cup oatmeal evenly on the bottom of the pan.
  • Mix 1 cup of sugars of your choice with cornstarch. Spread half of the apple slices over the oatmeal. Sprinkle half of the sugar on top of the apples. Add the rest of the apples, and then the rest of the sugar. Sprinkle the cinnamon over all.
  • Combine the 2-3 cups of oatmeal, softened butter, nuts, and 2-3 tbsp. Stevia. Sprinkle on top.
  • Bake at 375 degrees for 50-60 minutes. If the top is browning too quickly, after 30 minutes, turn the oven heat down to 350 degrees. Test doneness by inserting a fork into the apples; they should be tender. Serve with whipped cream or ice cream.
