Jill's Famous Chocolate Chip Cookies

Ingredients
  

  • 2 1/2 cups regular oats
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 sticks butter (1 cup)
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup walnuts or pecans, chopped
  • 12 ounces chocolate chips

Instructions
 

  • Grind oats in a blender or food processor until part of the oats look like a coarse flour. Mix ground oatmeal with flour, baking soda, baking powder, and salt. In a separate bowl, mix sugars, eggs, butter and vanilla. Add flour mixture to sugar mixture; blend well. Stir in chocolate chips and nuts.
  • Drop by spoonfuls on a parchment paper covered cookie sheet. Bake at 350 degrees for 9-11 minutes. The co okies will take longer to cook if you use parchment paper. If not, watch carefully to not overcook. How quickly the cookies cook depends on your oven and your cookie sheets. Take out of the oven just before they are done and let them set 3 minutes on the pan before removing to a wire rack.
