Wonderful Waffles
A sure winner with your family and friends!
- 1 pkg yeast (1 Tbsp)
- 1/2 cup warm water (105-115 degrees)
- 2 cups lukewarm milk
- 1 tsp sugar
- 1 tsp salt
- 1/2 cup vegetable oil (or melted butter)
- 2 cups all-purpose flour May use 1/4 the amount as whole wheat flour
- 2 eggs
- 1 pinch baking soda
Put the water and yeast in a large non-metal bowl. Let stand 5 minutes.
Add milk, oil, sugar, and salt. Still well. Add flour, ½ cup at a time. If you prefer a slightly thicker batter (I do), add ¼-1/2 cup more flour.
Cover with a clean dishtowel and set somewhere outof drafts. Let set overnight.
Beat two eggs in small bowl. Add eggs and pinch soda to the batter; stir well. Heat waffle iron. Pour batter in waffle iron according to your specific waffle iron. Cook until golden brown.
2 cups flour makes for a fairly thin batter. I usually add 1/4 to 1/2 cup more flour. Be willing to experiment with the amount to find the consistency you want and what works best for your particular waffle maker.
I substitute ½ cup whole wheat flour for ½ cup of the all-purpose flour. This adds some nutrition and the waffles are so light and fluffy, no one notices!
