Our family loves waffles. And, if I can find friends who are willing to come to my house at 8 in the morning, I love making waffles for other people. This recipe is so perfect for that because you can start it the night before.
What makes these so wonderful compared to traditional waffles? The recipe calls for yeast rather than baking powder or baking soda. You start the batter the night before and let it rise/rest like you would sourdough pancakes. You don’t have to have buttermilk on hand and you don’t have to separate eggs and whip egg whites. The recipe makes A LOT! And, oh! they turn out so light and tender. I guarantee you–they are better than Waffle House waffles! (Okay, for some people, that may not be saying much. But truth to tell my family would rather eat waffles at home than at a restuarant.)
These waffles freeze and reheat beautifully. Here’s what you do:
FREEZING INSTRUCTIONS:
f you have leftovers, break into sections and store meal sized portions in quart or gallon sized bags.
REHEATING INSTRUCTIONS:
Spray a toaster oven pan very lightly with oil. Place waffles in a single layer on the pan. Cook at 325 in a toast oven for 10 minutes.
Can you put them in a toaster? I don’t know! I’ve never done that. I haven’t owned a toaster in ten years. Try it and find out and then let me know how it works. Can you warm them up in the microwave? Um, yeah, you can. I wouldn’t recommend it. They won’t taste the same and if you over warm them, they can get tough. The toaster oven really does work the best.

Wonderful Waffles
Ingredients
- 1 pkg yeast (1 Tbsp)
- 1/2 cup warm water (105-115 degrees)
- 2 cups lukewarm milk
- 1 tsp sugar
- 1 tsp salt
- 1/2 cup vegetable oil (or melted butter)
- 2 cups all-purpose flour May use 1/4 the amount as whole wheat flour
- 2 eggs
- 1 pinch baking soda
Instructions
- Put the water and yeast in a large non-metal bowl. Let stand 5 minutes.
- Add milk, oil, sugar, and salt. Still well. Add flour, ½ cup at a time. If you prefer a slightly thicker batter (I do), add ¼-1/2 cup more flour.
- Cover with a clean dishtowel and set somewhere outof drafts. Let set overnight.
- Beat two eggs in small bowl. Add eggs and pinch soda to the batter; stir well. Heat waffle iron. Pour batter in waffle iron according to your specific waffle iron. Cook until golden brown.
